In the fall semester of 2001, two life long neighbors finally meet in a culinary pastry class. Casey Cheramie and Brianne Lefort had both attended the same high school and ended up at the Chef John Folse Culinary Institute at Nicholls State University. From the first meeting the two knew that their artistic eye and drive for business would make them great business partners. Chicken Scratch was thus born. Peddling their way from farmers markets to craft shows and even putting on their own open houses Chicken Scratch’s popularity grew. What had started out as a means of some extra cash to buy culinary school books had expanded beyond the two young chefs’ dreams.

Brianne graduated in the winter of 2004 after externing at the prestigious Scioto Country Club in Columbus, Ohio, and Randolph’s Restaurant and Catering in Golden Meadow, LA, a local landmark. Along with Casey, Brianne took a culinary field trip to the country of Costa Rica where they both learned exotic cooking methods as well as the culture of South America. In 2003 Brianne received an award from Emeril Lagasse for her dessert Autumn Apple Pie Cake which was featured on the menu at Emeril’s Delmonico Restaurant in New Orleans.

Casey graduated in the winter of 2005 with a Bachelor of Science degree in Culinary Arts and a Minor in Business Administration. In the summer of 2003 he attended the Italian Culinary Institute for Foreigners located in the Castle of Costigliole d’Asti near Torino, Italy. There he received in-depth training on Italian cuisine, wine and culture. He also attended L’Institut Paul Bocuse located in the Chateau du Vivier in Ecully on the outskirts of Lyon, France. He attended a special summer immersion program that focused on classic French dining and service.

During the spring of 2006 Casey and Brianne decided to finally make Chicken Scratch an official business. Chicken Scratch LLC was opened the week of Thanksgiving 2006. The business specializes in high end catering, gourmet gift baskets and customized cakes. “Everyday we’re able to share some of the most exciting occasions in peoples’ lives. We suppose that dreams really do come true.”
